This is what you need for 1 pizza:
4 cups raw cauliflower rice
1 egg, beaten
1/3 cup soft goat cheese (chevre)
1 teaspoon dried oregano
pinch of salt
Preheat your oven to 400F, pulse batches of raw cauliflower florets in a food processor, until you get a rice-like texture
Fill a large pot with about inch of water, and bring it to a boil. Add cauliflower, cover and cook for 4-5 minutes. Drain into a mesh strainer.
Once you’ve strained cauliflower, transfer it to a clean dishtowel.
Wrap up the steamed rice in the dishtowel, squeeze out all the extra moisture
Mix the strained cauliflower, beaten egg, goat cheese, and spices.
Press the dough out onto a baking sheet lined with parchment paper
Keep the dough about 1/3″ thick, and make the edges a little higher for the crust
Bake for 35-40 minutes at 400F and then add sauce, cheese, and any other toppings you like. VOILA!!!! No carbs, no problems!
